Supplies:

Burr Grinder             Scale (set to g)            Timer

Chemex Brewer           Chemex Filter               Water Kettle

25g Coffee              360g Filtered Water (Heated to 195-205 degrees F)

◊ Grind beans at a medium grind with a Burr Grinder no more than 15 minutes before brewing

◊ Open the filter into a cone shape so that one side of the cone has three layers, and place it into the top of the Chemex brewer (The three-layered portion should cover the pouring spout)

◊ Dampen the filter with warm water to rinse and preheat the brewer. Once the water has drained through the filter completely, pour it out of the brewer while keeping the filter sealed against the coffeemaker wall.

◊ Put freshly ground coffee into the filter cone, place on scale, and zero.

◊ Start the timer and pour a small amount of water over the coffee grounds to wet them. Wait for about 30 seconds for the grounds to “bloom”, releasing the most desirable coffee elements from the grounds.

◊ Slowly pour the remaining water over the grounds, using a circular motion as you pour to ensure an even soaking of the grounds.

◊ Once the desired amount of coffee is brewed, lift the filter with spent grounds out of the brewer and discard.

French Pressbrew-french-press

Supplies:

Burr Grinder             Scale (set to g)            Timer

French Press Brewer      60g Coffee                

600g Filtered Water (Heated to 195-205 degrees F)

◊ Grind beans at a coarse grind with a Burr Grinder no more than 15 minutes before brewing and place in the French Press Brewer

◊ Start the timer and pour a small amount of water over the coffee grounds to wet them. Wait for about 30 seconds for the grounds to “bloom”, releasing the most desirable coffee elements from the grounds.

◊ Pour in the rest of the water and steep the coffee for 4 minutes

◊ Press the coffee firmly and pour immediately

Aeropressbrew-aeropress

Supplies:

Burr Grinder             Scale (set to g)            Timer

Aeropress Brewer         Aeropress Filter pads       15g Coffee                

220g Filtered Water (Heated to 195-205 degrees F)

◊ Grind beans at a medium-fine grind with a Burr Grinder no more than 15 minutes before brewing

Load a filter into the Aeropress’ cap

Assemble Aeropress upside down (flared end up, numbers inverted), place it on scale, and zero scale. 

Drip a little hot water onto the filter to help it adhere to the cap, as you’ll be inverting it to attach.

◊ Gently stir and let sit for 30 seconds then top off with water and let sit for 60 seconds. After the minute has elapsed give the grinds a few vigorous stirs, then carefully screw on the cap.

◊ Flip the entire assembly over in one smooth controlled motion to sit on top of a mug and begin applying downward pressure to the upper section of the Aeropress. Be careful when you get to the bottom, as the last liquid exiting the chamber is followed by a hiss of vapor.
